YiaYia's Greek Carrot Cake

I grew up enjoying my Yia Yia's carrot cake. Unlike typical carrot cake, there is no icing on this recipe. Just a little powdered sugar.

Ingredients

  • 2 cups chopped carrots ; semi-fine
  • 2 cups sugar
  • 1 cup walnuts or other ; chopped semi-fine
  • 4 eggs
  • 1 cup oil ; neutral tasting one
  • 1 tsp salt ; not over full
  • 2 tsp cinnamon
  • 1 tsp baking soda
  • 1.5 tsp baking powder
  • 1 shot glass orange juice ; Don't add more, or it will taste like orange cake
  • powderd sugar ; to taste for the top

Steps

  1. Mix oil for five minutes with the shot glass of orange juice.
  2. Mix in sugar and eggs and let it mix 5 more minutes.
  3. Add carrots and nuts.
  4. Meanwhile, mix dry ingredients.
  5. Combine wet and dry. Mix by hand to remove all flour clumps, but do not overmix.
  6. Pour in 9x13 pan and bake at 350 for 1 hour. Check at 50 minutes and test with toothpick until it comes out dry.
  7. When it is totally cooled, add powdered sugar on top.
