Ultimate Whole30 Paleo Meatloaf

You can certainly half this recipe, but I would make it in its entirety and freeze in individual serving sizes by slicing, laying flat on a sheet pan, laying a sheet of wax paper on top and layering again. Once frozen, cut the wax paper in between to make for easy separating when removing from freezer.

Ingredients

  • 2 lbs ground beef
  • 1/4 cup almond flour
  • 1/4 cup Pork Panko - (this can add a lot of salt. I would probably double the almond flour instead of using this)
  • 2 eggs
  • 1/2 onion (diced fine)
  • 1/4 cup grated carrot
  • 4 cloves minced garlic
  • 2 tbsp coconut aminos (This is like soy sauce, but much better for you. I use it in everything!)
  • 1 tbsp Whole30 friendly ketchup (I skipped this part)
  • 2 tsp Italian seasoning
  • 1.5 tsp sea salt
  • 1/3 cup ketchup
  • 1 tbsp coconut aminos
  • 1 tsp dijon mustard
