Twice Cooked Pork (Hoi Ko Ro)

Ingredients

  • 10 oz thinly sliced pork loin
  • ¼ tsp kosher/sea salt (I use Diamond Crystal; use half for table salt)
  • ⅛ tsp freshly ground black pepper
  • 1 tsp potato starch/cornstarch
  • ½ green bell pepper
  • 3-4 leaves cabbage
  • 1 green onion/scallion
  • 1 clove garlic
  • 2 Tbsp neutral-flavored oil (vegetable, rice bran, canola, etc)
  • 1 Tbsp doubanjiang (spicy chili bean sauce/broad bean paste)
  • 2 Tbsp tienmienjiang (sweet bean sauce) (To substitute, mix 1 Tbsp red miso, ½ tsp soy sauce, ½ tsp sugar, ⅛ tsp sesame oil)
  • 2 Tbsp sake
  • 2 tsp soy sauce
  • 1 tsp sugar
  • ⅛ tsp white pepper
