Tomato Compound Butter

Sweet, savory, salty tomato butter spread. Great way to use up some homegrown cherry tomatoes!

Ingredients

  • Pint of cherry tomatoes
  • 1/2 cup salted butter, softened
  • Pinch of sugar
  • Herbs (basil, thyme, rosemary, etc.), optional
  • Salt, to taste

Steps

  1. Throw about a pint of tomatoes in the food processor or blender and process until smooth.
  2. Strain the processed tomatoes to remove seeds and bits of skin.
  3. In a small saucepan, lightly simmer the tomatoes, uncovered, stirring occasionally, until reduced. I let it simmer for about 30min.
  4. Stir in a pinch of sugar (and any finely-chopped herbs you might want) and let the tomato mixture cool.
  5. Thoroughly mix the tomato sauce and butter together, and add salt to taste.
  6. When serving, sprinkle finishing salt on top.
