Tomato Basil Gin & Tonic

Ingredients

  • Tomato basil shrub
  • 2c ripe heirloom tomato
  • 1c white wine vinegar
  • 1c granulated sugar
  • 8-10 basil leaves
  • 8-10 black peppercorns
  • Gin & Tonic
  • 2.5oz gin (optional)
  • 1.5oz tomato basil shrub
  • 4-6oz tonic water
  • Ice (I froze slices of cucumber, banana pepper, peppercorns, and basil leaves in the ice cubes)
  • Garnish (tomato wedges, basil)

Steps

  1. Mix together the shrub ingredients in a large mason jar or covered bowl. Let it sit for 2-4 days, stirring once a day.
  2. Strain the mixture through cheesecloth. The shrub will stay good in the fridge for up to two weeks.
  3. Combine the gin & tonic ingredients and enjoy!
