Steak Tagliata

Ingredients

  • 6 oz cooked beets
  • 1 x 10-oz skirt steak or flank steak
  • 1/4 cup thick balsamic vinegar
  • 1 1/2 oz goat cheese
  • 1/2 bunch of tarragon

Steps

  1. Trim and slice the beets 1/4 inch thick. Preheat a frying pan on high heat. Season steak with salt and pepper, and place in pan with some olive oil.
  2. Fry for 5 mins or until medium rare, turning regularly. Remove to a plate to rest.
  3. Put the beets in the pan and drizzle with balsamic to glaze. Divide between serving plates and layer with steak (sliced against the grain) and goats cheese.
  4. Scatter herbs on top.
