Trim and slice the beets 1/4 inch thick. Preheat a frying pan on high heat. Season steak with salt and pepper, and place in pan with some olive oil.
Fry for 5 mins or until medium rare, turning regularly. Remove to a plate to rest.
Put the beets in the pan and drizzle with balsamic to glaze. Divide between serving plates and layer with steak (sliced against the grain) and goats cheese.
