Start by making your pizza dough, if applicable. If using store bought, allow to come to room temp while you are prepping the rest.
Preheat oven to 425F.
Chop up your shallots and garlic, either in slices or a finer dice depending on your patience level. Once chopped, add to a medium-large pan over medium heat with some olive oil.
Once wilted, remove from heat. Crumble in as much feta as looks yummy, and add in as much shredded mozz and provolone as feels right
Roll out your dough into an approximate circle (but an oval is acceptable). Once rolled out, put your spinach-cheese mix on one side of the dough (I'm partial to the left-side). Take the barren half and fold over top the filling to make a half-moon shape. Crimp or twist the dough closed.
LAST BUT NOT OPTIONAL, mix up some olive oil with garlic powder/oregano/chili flakes/salt and brush on the outside of the dough. This is arguably the best part. Then cut a few little slits on top of the calzone so your little spinach baby doesn't explode. Place lil guy into your oven and bake until very golden brown, 25 to 30 minutes most likely.
Serving suggestion: Some warm marinara for dipping, the extra olive oil mix to dip in your lil crimped crust situation. Maybe some Lactaid.
