Southwest Tofu Scramble

Ingredients
2 containers of tofu (drained)
2 tsp of turmeric
1 tsp cumin
1/2 tsp garlic powder
1/2 tsp chili powder
1 tsp salt
1/2 tsp pepper
1 Tbsp cooking oil
2 cans of diced tomatoes
Steps
Crumble tofu (using hands) into a large bowl.
In a small bowl, combine all the spices and whisk with a fork.
Add spices to tofu and gently stir until coated.
Add oil to pan and heat to medium.
Add tofu mixture and cook for 5 minutes.
Drain tomato cans and then add to scramble. Cook for another 10 minutes.
