Southwest Tofu Scramble

Ingredients

  • 2 containers of tofu (drained)
  • 2 tsp of turmeric
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 Tbsp cooking oil
  • 2 cans of diced tomatoes

Steps

  1. Crumble tofu (using hands) into a large bowl.
  2. In a small bowl, combine all the spices and whisk with a fork.
  3. Add spices to tofu and gently stir until coated.
  4. Add oil to pan and heat to medium.
  5. Add tofu mixture and cook for 5 minutes.
  6. Drain tomato cans and then add to scramble. Cook for another 10 minutes.
