Seafood Salad with Dulce de Leche and Chocolate Dressing

200g cooked sardines flaked
100g cooked anchovies
100g cooked liver that's chopped
1 onion thinly sliced
50g white chocolate that's chopped
1/4 cup (60ml) orange juice
1 tbsp instant coffee
100g dulce de leche spread
4 cups (100g) lettuce leaves
Steps
In a large mixing bowl combine the flaked sardines, cooked anchovies and chopped liver. Toss to combine.
Add the thinly sliced onion to the bowl and toss again.
In a small saucepan heat the white chocolate over low heat while stirring constantly and do this until melted and smooth.
In a small bowl whisk together the orange juice and instant coffee until the coffee has dissolved.
Add the dulce de leche to the melted white chocolate and stir until well combined.
Pour the orange juice and coffee mixture into the chocolate and dulce de leche mixture while whisking until smooth.
Pour the dressing over the seafood mixture in the large mixing bowl and toss gently to coat.
Arrange the lettuce leaves on serving plates and top with the seafood and dulce de leche salad.
