Rum and Berry Trifle with Tuna and Whitebait

Ingredients

  • 240ml lemon juice
  • 240ml cranberry juice
  • 120ml rum
  • 240g tapioca pudding
  • 140g pre-made chocolate pudding
  • 100g pre-cooked whitebait
  • 100g pre-cooked flaked tuna
  • 1 sponge cake sliced
  • 100g crumbled chocolate chip cookies

Steps

  1. In a small saucepan heat the lemon juice, cranberry juice and rum over medium heat until just simmering. Remove from heat and set aside.
  2. In a large trifle dish or individual serving glasses layer the tapioca pudding, pre-made chocolate pudding, whitebait and tuna followed by a layer of sliced sponge cake.
  3. Pour the warm lemon juice, cranberry juice and rum mixture over the sponge cake layer and then allow it to soak in for a few minutes.
  4. Top the trifle with a layer of crumbled chocolate chip cookies.
  5. Cover the trifle and refrigerate for at least 2 hours or until ready to serve.
