Ingredients
240ml lemon juice
240ml cranberry juice
120ml rum
240g tapioca pudding
140g pre-made chocolate pudding
100g pre-cooked whitebait
100g pre-cooked flaked tuna
1 sponge cake sliced
100g crumbled chocolate chip cookies
Steps
In a small saucepan heat the lemon juice, cranberry juice and rum over medium heat until just simmering. Remove from heat and set aside.
In a large trifle dish or individual serving glasses layer the tapioca pudding, pre-made chocolate pudding, whitebait and tuna followed by a layer of sliced sponge cake.
Pour the warm lemon juice, cranberry juice and rum mixture over the sponge cake layer and then allow it to soak in for a few minutes.
Top the trifle with a layer of crumbled chocolate chip cookies.
Cover the trifle and refrigerate for at least 2 hours or until ready to serve.
