Rajma/Chole Masala

Ingredients
Rajma/Chole (1 handful)
Ginger
Garlic
Onion 1
Tomatoes 2
Green Chilli
Garam Masala Pieces
Butter (for Rajma)
Milk or Cream (for Rajma)
Steps
Wash and soak Rajma/Chole for 1 whole day
Drain and add fresh water
Pressure Cook with salt till very soft
Crush ginger and garlic into paste
Chop Onion Finely
Chop tomatoes finely
Slit Green Chilli
Heat Oil
Add jeera & hing
Add garam masala pieces - clove, cardomom, cinnamon, tej pata
Add slit green chilli
Add chopped onion
Add salt, haldi, dhania powder. Can add optional masalas like jeera powder, rajma masala, garam masala, amchur
When onion is slightly burnt, add chopped tomatoes
Cook till the masala is completely soft. Keep mashing with the ladle in the wok itself to a paste
Transfer the masala to cooker along with cooked rajma/chole and its water. If making Rajma, add butter and milk.
Pressure Cook for some more time till blended well
If making Rajma, garnish with cream (optional). If making Chole, garnish with Coriander.
