Pumpkin miso cookies

Basically Justine Snacks pumpkin cookie (https://justinesnacks.com/the-best-pumpkin-chocolate-chip-cookies/), but with some minor modifications

Ingredients

  • 1 ¼ cup all-purpose flour (150 grams)
  • 3 tbsp cornstarch (24 grams)
  • 2 tsp pumpkin spice
  • 2 tsp baking powder
  • ½ cup butter (113 grams)
  • ¼ cup brown sugar (40 grams)
  • ½ cup white sugar 110 grams
  • ¼ cup pumpkin puree (60 grams)
  • 1 ½ tbsp miso paste
  • sesame seeds for topping

Steps

  1. cream butter with sugars until fluffy. add in egg. add in pumpkin puree and miso paste.
  2. add all the dry ingredients into the wet ones and mix until just combined.
  3. refrigerate for at least 30 mins, roll into balls, press top of ball into sesame seeds
  4. bake at 400 F for ~13-16 mins & enjoy :)
  5. notes: very light and fluffy / cakey. maybe press moisture out of the pumpkin next time. also could use a little more pumpkin flavor and a little more spice flavor -- consider altering the amount of these next time.
  6. notes, pt2: the glutinous version spread a decent amount but the GF ones did not spread at all. if making these GF then press the dough out flat prior to baking!
