Potato Soup

The potato soup we made with Betty Burgers when the girls were kids. Remember most of the flavor in this soup comes from the toppings: Bacon crumbles, cheese, onion, etc.

Ingredients

  • 1-2 large or 3-4 small Russett Potatoes diced in 1 inch cubes
  • 1 tbsp of butter OR 1/2 tbsp of butter and 1/2 tbsp of bacon grease
  • 1 small onion, diced, save some for topping at end.
  • 1 clove of garlic
  • Milk (I use skim)
  • 1 tsp salt
  • 1/2 tsp pepper

Steps

  1. In a large sauce pan, melt butter or butter and bacon grease over medium heat.
  2. Add onions and cook until almost translucent.
  3. Add garlic and cook for 1-2 more minutes
  4. Add potatoes, salt, and pepper to pot and stir around until mixed in with onions and garlic well.
  5. Add Milk to cover about 1 inch above potatoes, because I use skim milk, the soup stays pretty thin. It will thicken as it sits and as you add toppings.
  6. Leave at medium heat until the milk becomes hot, then turn down to low and cook slowly until the potatoes are soft. Stir often because the milk will stick and/or burn if you do not watch the soup. This can take 20-30 minutes, just watch for potato doneness.
  7. When done, top with Colby Jack Cheese, Crumbled Bacon, and fresh onions or green onions.
  8. Serve alone or with "Betty" burgers which are small burgers patted out to fit on canned biscuits, salted and peppered and pan cooked until done. Use the larger canned biscuit as your bun.
