This is a family favorite. When we were kids, my brothers would compete to see who could eat the most kugel. We love it so much, we serve it at Thanksgiving!

Ingredients
2 large mild onions
8 large eggs
3/4 cup olive oil
1 tablespoon Kosher salt
2 teaspoons ground black pepper
6 pounds Yukon Gold or similar yellow, waxy-skin potato
Steps
Preheat your oven to 350 degrees.
Grate the onions using the shredding disc in your food processor.
In a large bowl, lightly beat the eggs with the oil and the salt and pepper. Mix in the grated onion.
Peel and grate the potatoes in the food processor and stir them into the egg mixture.
Lightly brush a wide, shallow baking dish with olive oil. Pour the potato mixture into the baking dish and distribute evenly.
Bake for 50 minutes to an hour (depending on your oven; mine runs hot), then turn the heat up to 450 degrees for 5–10 minutes to brown the top.
Serve hot with sour cream and homemade applesauce.
