Mexican Street Corn Salad

Ingredients
3-4 C fresh or frozen corn
1 T butter
1 T oil
1/4 C mayonnaise
1/4 C sour cream or creme fresh
1/4 C chopped fresh cilantro
2 T lime juice
1 tsp chili powder
1/4 tsp smoked paprika
1/4 tsp ground cumin
pinch of black pepper
1 tsp salt
1/4 C queso or feta cheese
Steps
Heat butter. oil and corn for 2-3 minutes
Mix all the other ingredients together well.
Add to corn.
Sprinkle with feta or queso fresco if desired
