A concoction of my own. My students think this sounds terrible. I say otherwise.
Ingredients
1 lbs ground beef
2 medium sweet potatoes
1 quart of water
1 bag (12 oz) kale
2 tablespoons olive oil
Chopped garlic
1 can of black beans
1/3 cup feta cheese
1/3 cup Greek yogurt
Parsley
Dash lemon juice
Steps
Brown the ground beef in a skillet. Add spices of your choosing, such as salt, pepper, and paprika
Boil 1 quart of water and add salt. Microwave the sweet potatoes for around 45 seconds. This makes them softer to cut. Cube them and add them to the boiling water.
Put the kale into a bowl and drizzle with the olive oil. Massage for at least 3 minutes, ideally 5.
Add kale, beans, and garlic to the skillet and mix with the ground beef. Season to taste.
Once the sweet potatoes are soft, add them to the skillet as well. At this point, throw the Greek yogurt in, adding parsley and lemon juice.
Sprinkle with feta, give it another good stir, and serve hot!
