Ketchup (Heinz copycat)

Ingredients

  • 1/4 bushel fresh tomatoes (11 lbs)
  • 2 C white distilled vinegar
  • 1 1/2 C sugar
  • 2 1/2 Tbs. salt
  • 1 Tbs. onion powder
  • 1/4 tsp cinnamon
  • 1/4 tsp allspice
  • 1/4 tsp ground cloves

Steps

  1. Juice and strain tomatoes
  2. Put into large stockpot, add all ingredients.
  3. Cook on medium heat for 3 hours or until desired thickness.
  4. Sterilize jars and lids
  5. Fill jars, leaving 1/2 inch headspace
  6. Seal and process in hot water bath for 15 minutes.
  7. Remove from pot and allow to seal. Check seals after 12 hours.
