Jeweled Cranberries

Ingredients

  • 2 C sugar
  • 1 3/4 C water
  • 1 t vanilla
  • 2 t orange juice
  • 12 oz fresh cranberries
  • 1 C sure fine sugar

Steps

  1. Combine 2C sugar, water, vanilla & OJ in saucepan.
  2. Heat over medium heat until sugar is dissolved but do not allow to boil.
  3. remove from heat & allow to cool for a few minutes so berries won’t pop
  4. Pour berries in syrup & stir
  5. After syrup is at room temp, cover berries in syrup with plastic wrap & refrigerate overnight.
  6. Next day, lay wax paper on baking sheet pan. Scatter 1c sugar on paper.
  7. Strain berries & roll in sugar til fully covered.
  8. Allow berries to completely dry on wax paper. Store in airtight container in cool spot.
  9. NOTE: strained syrup can be stored for a future batch!
