Ingredients

  • 4 large eggs
  • 4 Tbsp sweet dashi (recipe follows)
  • 2 Tbsp neutral-flavored oil (vegetable, rice bran, canola, etc) (to cook the egg)
  • 1 ¼ cup dashi (Japanese soup stock; click to learn more)
  • ½ cup sugar
  • 1 ½ tsp soy sauce
  • 2 tsp kosher/sea salt (I use Diamond Crystal; use half for table salt)
