Italian Christmas Cookies

I ALWAYS double this dough recipe but not the glaze

Ingredients

  • 2 eggs
  • 6 tablespoons vegetable oil
  • 1 teaspoon almond extract
  • 2 cups all purpose flour
  • 2 tsp baking powder
  • 1 pinch salt
  • Glaze
  • 2 cups powdered sugar
  • 1 tsp almond extract
  • 1 pinch salt
  • 3-4 tablespoons warmed milk
  • Christmas sprinkles

Steps

  1. Whisk eggs, oil, sugar and extract together
  2. Add flour, baking soda and salt mix until dough forms
  3. Roll tablespoon size balls and place on wax paper lined baking tray
  4. Chill balls for 1 hours or freeze for 15-20 mins
  5. bake chilled balls for 9-12 mins the bottoms of the cookies should be lightly browned and the tops should be set but still white
  6. Let cookies cool to room temperature on a cooling rack
  7. Mix glaze ingredients into a bowl
  8. dip top of cookies in the glaze and sprinkle with sprinkles
  9. let set until glaze dries
