Garlic Scape Bucatini

w/ Hot Sausage in a White Wine Cream Sauce

Ingredients

  • 8oz bucatini
  • 3 hot sausage links casings removed
  • 3 minced garlic cloves
  • 1 cup chopped garlic scapes
  • 1 cup halved cherry tomatoes
  • 1/4 cup dry sherry
  • 1/2 cup cream
  • 1/4 cup white wine
  • 1/2 cup grated parmigiano reggiano
  • 1/4 cup chopped parsley
  • red pepper flakes
  • salt
  • pepper
  • oil

Steps

  1. brown sausage in dutch oven. remove to bowl.
  2. cook bucatini in salted water.
  3. add tomatoes to dutch oven. cook until juices release.
  4. add garlic scapes. cook until bright green.
  5. add garlic and red pepper flakes. cook for 1 minute.
  6. deglaze with sherry. scrape brown bits. cook down.
  7. add wine and simmer.
  8. add cream and simmer. salt and pepper to taste.
  9. add cooked bucatini and stir. add 1/2 cup of pasta water to thicken.
  10. add parm and stir until sauce is sticking to pasta.
  11. add parsley.
