A quick and flavorful meal. The creamy eggs pair perfectly with the toast, and the avocado and sweet caramelized onions add a nice contrasting flavor.

Ingredients
1 sweet/yellow onion
2 tsp peanut oil
4 eggs
2 tbsp milk
Salt and pepper
1 tbsp butter
2 slices bread
4 slices of deli meat
2 slices muenster cheese
1 avocado
Steps
Cut the onion into thin strips and saute in the peanut oil over low heat. Be sure to stir them around once in a while so they don't burn.
Whisk the eggs with the milk until fully combined. Then in another non-stick pan melt the butter over low/medium heat.
Pour the eggs into the non-stick pan and let it sit for a few seconds. As the eggs cook, continue to stir them until they reach a creamy consistency. It might be helpful to take the pan off the heat every so often while stirring so they don't overcook.
When the eggs are almost cooked, add in some salt and pepper to taste and take the pan off the heat.
Once the onions are caramelized, portion them into the plates. In the same pan, add in the deli meat and fry for a few seconds.
Toast the bread slices in the same pan with the cheese on top. When the meat is done frying, add it on the toast as well. The remaining oil from the onions will give the toast a nice flavor.
Once the toast is done add it to the plate. Also transfer the eggs and sliced avocado.
