Cowboy Crack Dip

A great dip that's quick to make for a get together with friends and family. Serve with tortilla or corn chips.

Ingredients

  • 1/2 lb ground chorizo
  • 8 oz cream cheese
  • 10 oz Rotel
  • 15 oz black beans
  • 15 oz corn
  • 8 oz cheddar cheese, shredded
  • 1/8 cup fresh cilantro, chopped

Steps

  1. Cook chorizo over medium heat in a large skillet.
  2. Add cream cheese, Rotel, black beans and corn to the skillet.
  3. Cook over medium heat until cream cheese is melted and beans and corn are thoroughly heated.
  4. Stir in shredded cheddar cheese and cook over low heat until melted and thoroughly combined.
  5. Top with cilantro and serve.
