Dads go-to cookie recipe!🍪

Ingredients

  • Cream together in the kitchen aid:
  • 1 cube butter
  • 1/2 C shortning (butter flavor is best)
  • 1 C soft brown sugar
  • 1 C Sugar
  • ADD:
  • 3 Tsp vanilla
  • 1 Egg whisked
  • 1 Tsp salt
  • 3 Tsp Baking Powder
  • 3 C flour
  • Next add 1 cup quick oats
  • 1/4 cup old fashioned oats
  • 1 C coconut
  • 1 C milk chocolate chips ( Use what you have but Guittard is best.   Optional: to make it really special, double the chocolate chips.  Next level special is purchase gourmet chips

  • heat oven to 350 Use medium cookie scoop on to silpat.   Cook for 7-9 minutes.   Do not over bake!!!!!!!

Steps

  1. Do not skip the shortening.    Cookies are difficult and years ago I learned the best predictable cookies always you both butter and shortening for predictability.
  2. I’d also use this rule for pie crust.   I also add a small pinch of baking powder to the crusts. And add a table spoon of sugar to the crust dough.    Makes it a bit more of a light cookie and not just bland dense crust.
  3. Also we’ll freeze the leftovers in a sandwich bag.  I just score with a flat edge I yo 16 segments.  It will be ready to bake or eat later.
