Chicken Tetrazzini

Ingredients

  • 1/2 lb boneless, skinless chicken breasts
  • 4 oz angel hair pasta
  • Optional: 1 cup sliced mushrooms
  • 1 tbsp olive oil
  • 1/2 cup frozen green peas, thawed
  • 2 tbsp butter
  • 1 tbsp whole wheat flour
  • 1 cup milk
  • 1/4 cup Parmesan cheese
  • 1/4 tsp salt
  • 1/4 tsp pepper

Steps

  1. Preheat oven to 350. Bake chicken in lightly greased baking dish 25-30 minutes or until done; cool slightly and shred
  2. Meanwhile, cook pasta according to package directions
  3. *Optional* Saute mushrooms in hot oil in nonstick skillet over medium-high heat 5 minutes.
  4. Combine chicken, pasta, mushrooms and peas in a bowl
  5. Melt butter in a saucepan over medium heat; stir in flour. cook, stirring for 2 minutes or until bubbly; add milk; cook stirring constantly for 5 minutes or until thickened.
  6. Stir in 2 tbsp cheese, salt and pepper. Add to pasta mixture.
  7. Spoon into greased 11x7 baking dish; top with 2 tbsp cheese
  8. Bake 20 minutes or until bubbly.
