Chicken Pockets

Misloski family favorite - simple but a cool main course. Also easy leftover, eaten hand-held.

Ingredients

  • Pre-cooked chicken - 2 cups
  • Cream Cheese - 3-4 oz softened
  • Butter - 2 T
  • Onion - 1/2 chopped
  • Milk - 2 T
  • Crescent Roll - dough rolls
  • Butter - 2 T melted
  • Herbed Stuffing Mix - 1-2 cups

Steps

  1. Heat oven to 350°. Chop Chicken into bite size pieces, bring to room temperature.
  2. In small bowl, microwave 2 T butter and chopped onion for 1-2 min till onion is softened.
  3. In medium bowl add butter/onions to softened cream cheese and milk, stir to combine.
  4. Add chicken to cream cheese mixture until fully combined, add salt and pepper.
  5. Unroll two crescent triangles to form rectangle, pinch seams together, leaving no gaps.
  6. Add a heaping spoonful of the chicken mixture to center of crescent dough, then gather up corners and seal to form a ball. Set aside.
  7. Repeat steps 5-6 until all chicken pockets are formed.
  8. Gently roll each pocket in the melted butter, then into the stuffing mix, place on ungreased baking sheet.
  9. Bake in 350° oven for 30 min, or until browned and dough is fully cooked.
