Broccoli Salad

Ingredients

  • 300g Broccoli florets (about 2 bunches)
  • 1 red or green pepper cored/cut in half
  • 1 apple - peeled and cored/cut in half
  • 30g pine nuts
  • 25g olive oil (about 2 TBS)
  • 15g apple cider vinegar (about 1TBS)
  • 1 tsp honey
  • 1.5 tsp mustard
  • 1tsp mustard
  • 1tsp fine sea salt
  • 1/2 tsp black pepper
  • Feta or Goat or Parm cheese

Steps

  1. Place all ingredients in food processor and chop until desired size.   (I use a thermomix so I chop 7 seconds at speed 4)
  2. If chopping broccoli and pepper by hand, mix all liquid ingredients together before tossing the sauce onto the mixture
  3. Garnish with cheese of choice (optional)
