Blueberry cornmeal cookies

Ingredients

  • 10 tbsp butter, rt (142g)
  • 2/3 cup granulated sugar (127g)
  • 1/4 cup light brown sugar (48g)
  • 1/4 cup honey (84g)
  • 1 egg yolk
  • 1 1/2 cup all purpose flour (180g)
  • 1/2 cup cornmeal (72 g)
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • ~1/4-1/2 cup jam of choice

Steps

  1. cream butter with sugars. add in honey and egg yolk and mix until smooth.
  2. add in dry ingredients and mix until fully combined. swirl in jam (very briefly!) with a spatula. refrigerate for 15-30 mins ish but not much more (to avoid dough drying out)
  3. roll into balls, bake at 350 F for ~12-15 mins & enjoy :)
