Black Bean Quesadillas

Quick, easy, and inexpensive!

Ingredients

  • 2 cans black beans
  • 1 can Rotel (tomatoes and green chilies)
  • 1 yellow, sweet, or purple onion, chopped
  • 2-3 cloves garlic, minced
  • paprika, chili powder, cumin to taste (about 1/4 to 1/2 teaspoon of each)
  • 1/2 teaspoon of salt, more to taste
  • 6 whole wheat, regular, or GF tortillas
  • Optional: corn added to the mix, canned chicken added into the mix, cheese for on top
  • Optional: salsa and sour cream or Greek yogurt for topping dipping

Steps

  1. Sauté the onion and garlic
  2. rinse one can of beans and mash with fork or potato masher
  3. rinse the other can and add to the mashed beans (don’t mash)
  4. drain the rotel and add to the bowl
  5. add onions and garlic and any other optional add-ins (corn, chicken, etc)
  6. add spices and salt to taste
  7. Add mixture to one side of open tortillas, top with cheese, and fold in half
  8. Bake at 350° for 10-12 minutes
  9. Cut into triangles if desired
