Beef and Bean Nachos

Ingredients

  • 1/2 lb ground beef
  • 2 tsp low-sodium taco seasoning
  • 3/4 cup black beans, drained and rinsed
  • 1 cup corn
  • 4 oz tortilla chips
  • 2/3 cup shredded cheddar cheese
  • 1 Roma tomato, chopped
  • 1 green onion, sliced

Steps

  1. Preheat broiler. Sprinkle beef with taco seasoning; cook in a large skillet over medium heat 8 minutes or until browned and crumbly. Remove beef from skillet; drain. Transfer to a plate.
  2. Add beans and corn to skillet; cook 5 minutes or until lightly browned and tender.
  3. Spread chips on a rimmed baking sheet. Top with beef, bean mixture, and cheese. Broil 2 minutes or until cheese melts. Top with tomato and onion.
