Bean and Hominy Soup

This soup is fantastic and so simple to make!! It's a meal in itself! All you do is "dump" cans and cook!

Ingredients

  • 3-(15 1/2 oz.) cans Great Northern, Butter Beans, white beans or pinto pinto beans  undrained  I mix and match
  • 1-(15 ½ oz.) can of hominy, undrained
  • 1-(14 ½ oz) can no-salt added stewed tomatoes, undrained
  • 1-(11 ½ oz) can of bean with bacon soup, undiluted or vegetarian refried beans for vegans (soup thickener)
  • 1-(10 oz) can diced tomatoes and green chiles (Rotel is what I use)
  • (11 oz) can of whole-kernal corn, undrained
  • 1-2/3 cups water
  • 2- bay leaves
  • 3- tablespoons chopped fresh cilantro
  • 1- teaspoon ground cumin
  • 1- cup (4 oz) shredded sharp cheddar cheese for garnish; optional

Steps

  1. Combine all ingredients except cheese in a large pot and bring to boil. Cover, reduce heat, and simmer 30 minutes, stirring occasionally. Discard bay leaves. Serve topped with cheese. 8 servings.
