Basic Homemade Stock

Quintessential homemade stock to elevate any flavor of the dish! This is the foundation for your cooking so add anything you like! This will be your signature flavor! This is what I typically use, but I never make the same stock twice, so experiment!

Ingredients

  • Chicken Carcass and Bones
  • Chicken Wings (Optional, contains the most flavor for stock)
  • Enough Water to cover Everything
  • 1-2 Carrots
  • 2-3 Celery Sticks
  • Half Onion
  • 3-5 Cloves of Garlic
  • Kombu (Dried Kelp ~NJP's signature)
  • Peppercorn
  • Star Anise

Steps

  1. Place Chicken Carcass and Bones into a pot and cover with Cold Water.
  2. Bring to a boil.
  3. Skim of the impurities. They look like sea foams.
  4. Add all the flavors in.
  5. Gentle simmer with cover off. Evaporation helps to condense the flavor
  6. Gentle boil until desired taste! Be careful, it's hot!
  7. Strain the stock into a storage container.
  8. Let cool before storing in fridge.
  9. Enjoy the meat from the carcass. It's actually good!
