Delicious, easy to make banana pancakes that are a favorite of adults, kids and teething babies! This is a great starter recipe that can be easily customized and adjusted to anyone's liking.

Ingredients
2 large bananas
4 eggs
1 tsp vanilla extract
1 1/2 cups quick oats
1 tsp cinnamon
1 1/2 tsp baking powder
1 Tbsp light brown sugar
1/2 cup chocolate chips (optional)
Steps
Combine all ingredients in a large bowl
Let the mixture sit for 3-5 minutes to allow the oats to soak up some of the moisture (the batter will thicken as it sits)
Place 1/8-1/4 cup helpings of the mixture (depending on desired size) into a large pan and cook over medium-low heat
Cook 3-4 minutes per side, or until golden brown (mixture will be thick, a longer cooking time helps to soften the oats)
Serve with your favorite pancake toppings and enjoy!
