Bacon Wrapped Turkey/ Scrapple Meatloaf

Can use pork or ground beef :)

Ingredients

  • 1 pound Ground turkey
  • 1 pound Scrapple
  • 1 diced onion
  • 1 diced large green pepper
  • 2 cloves garlic minced
  • 1 cup Almond flour
  • 1 1/2 c. Shredded Mozzarella
  • 1/2 c. Grated Parmesan
  • 4 large eggs
  • 2 Tbsp Worcestershire Sauce
  • 1 tsp salt
  • 1 tsp pepper
  • Bacon to cover loaf
  • 3 Tbsp ketchup
  • 1 Tbsp Italian Salad dressing

Steps

  1. Preheat Oven to 375 F
  2. Line 9x13 baking dish with foil
  3. In large bowl mix first 12 ingredients with hands, don’t over mix, shape into loaf.
  4. Place raw Bacon over loaf until covered.
  5. Whisk together ketchup and Italian dressing, brush over bacon to coat.
  6. Bake 35 minutes
  7. Then increase oven temperature to 425F and bake another 25 min until internal temperature is 160F.
  8. Let sit for 10 minutes before slicing.
