Apple Plum Chutney

Another fabulous Small Batch recipe. It is the curry and allspice that works wonders against the plums.

Ingredients

  • 5 cups Apples - peeled and chopped
  • 2 1/2 cups Tomatoes - peeled and chopped
  • 2 cups Blue Plums - peeled and chopped
  • 2 cups golden Raisins
  • 2 cups cider vinegar
  • 2/3 cup chopped onion
  • 2 cloves minced garlic
  • 2 1/2 cups dark brown sugar
  • 2 tsp curry powder
  • 1/4 tsp allspice
  • 1/4 tsp pickling salt
  • 1/8 tsp cayenne pepper

Steps

  1. Combine all fruits, onions, garlic and vinegar in saucepan. Bring to a boil, then reduce heat and continue boiling uncovered for 30 minutes.
  2. Add in sugar and allow to boil an additional 30 minutes. Compote should be thickening by then. Stir often to avoid burning on the bottom.
  3. Last, add in spices and cook a final 5 minutes while stirring constantly.
  4. Pour into jars, then process in boiling water to vacuum seal.
