Brown sugar/Cinnamon Mix
1/3 cup light brown sugar
1 teaspoon cinnamon
Apple Mix
2 large red apples, chopped small
2 tablespoons sugar
1 teaspoon cinnamon
Bread
1 stick butter, softened
2/3 cup sugar
2 eggs
1 1/2 teaspoons vanilla extract
1 1/2 cups flour
1 3/4 teaspoons baking powder
1/2 cup milk
Glaze
1/2 cup powdered sugar
2-3 tablespoons of milk depending on desired consistency
1 teaspoon of vanilla extract
Steps
Preheat oven to 350F.
Mix 1/3 cup brown sugar and 1 teaspoon cinnamon together in a bowl. Set aside.
Chop 2 apples and toss in sugar and cinnamon. Set aside.
Whisk together flour and baking powder in a bowl. Set aside.
In another bowl, beat sugar and butter until creamy.
Add eggs and vanilla extract then beat well.
Gradually mix in flour mixture.
Mix in milk.
Spray a 9x5-inch loaf pan with non-stick baking spray.
Pour half the bread batter into the loaf pan and spread out.
Top with half the chopped apple mix.
Sprinkle 1/2 of the brown sugar/cinnamon mixture on top.
Repeat layers.
Use a knife and swirl through the mixture a few times.
Bake for approximately 1 hour, or until a toothpick inserted in the center come out clean. Enjoy!
