Apple Crisp Bars (Vegan/Gluten Free)

Ingredients

  • Crust/topping
  • 1/2 cup (115 g) non dairy butter
  • 1 cup (100 g) gluten free rolled oats
  • 3/4 cup (120 g) gluten free 1:1 flour
  • 3/4 cup (185 g) brown sugar
  • 1 tsp (4 g) ground cinnamon
  • 1 tsp (5 g) vanilla extract
  • 1/2 tsp (3 g) salt
  • Filling
  • 4 apples, thinly sliced
  • 1 tbsp lemon juice
  • 1/4 cup (62 g) brown sugar
  • 2 tbsp (33 g) sugar
  • 1/4 cup (60 g) gluten free 1:1 flour
  • 1 1/2 tsp (6 g) ground cinnamon
  • 1 tsp (5 g) vanilla extract
  • 1/2 tsp (2 g) ground nutmeg
  • 1/4 tsp (1 g) ground ginger
  • 1/8 tsp ground cardamom

Steps

  1. Preheat oven to 350° F
  2. Line 8 x 8 pan with parchment paper
  3. In a medium mixing bowl, combine dry crust/filling ingredients. Set aside.
  4. Melt butter
  5. Pour melted butter into dry ingredients. Mix until well combined.
  6. Press roughly half the mixture into lined pan. Set aside.
  7. Peel and slice apples
  8. Pour sliced apples into large mixing bowl. Sprinkle with lemon juice.
  9. Add remaining filling ingredients and stir to evenly coat.
  10. Pour filling over crust.
  11. Sprinkle remaining crust mixture on top of filling.
  12. Bake for 60 minutes.
  13. Cool completely before cutting.
