Ingredients

  • 1/2 cup butter, plus 1 Tbsp for buttering cake pans
  • 2 Tbsp finely chopped sage
  • 3/4 cup sugar for cake, 1/4 cup sugar for frosting
  • 1/3 cup mascarpone cheese for cake, 2/3 cups for frosting
  • 1/2 tsp kosher salt
  • 1 large egg
  • 1/4 cup milk
  • 1 1/2 tsp vanilla
  • 1/2 cup gf flour
  • 1 1/2 tsp baking powder
  • Lemon
  • 1/2 cup heavy cream

Steps

  1. Preheat oven to 350 degrees and prepare a 9-inch circle cake pan or two 6-inch pans with parchment paper and butter.
  2. Brown butter over medium heat by whisking constantly for 6-8 minutes until golden. Once the solids begin to turn golden, take the butter off the heat and whisk in the finely chopped sage, mascarpone, and sugar. Let stand 5 minutes before transferring to mixing bowl.
  3. Add egg, milk, salt, and vanilla to the bowl. Whisk to combine until visibly creamy. Add flour and baking powder and stir until combined. Do not overmix. Pour into prepared cake pans and bake at 350 for 25-30 minutes, or until the top and edges of the cake is a deep golden brown.
  4. For frosting: Use an electric mixer to beat 2/3 cup mascarpone cheese with the zest of 1 lemon and 1/4 cup sugar. Once creamy and smooth, about 2 minutes, add 1/2 cup of heavy cream and beat until stiff peaks form. Top your cake with the whipped cream and some more lemon zest and sage.
